Cheese Quesadilla

One famous Mexican Snack  and/or Appetizer is Cheese Quesadilla.  Basically a tortilla sandwich with cheese filling has evolved with the variations in fillings or stuffing’s used.  Tortillas are basically thin as compared to quiche, so it is important not to layer on with fillings too thickly.

One way to enjoy this snack is to eat with nacho chips and dips such as guacamole, tomato salsa and sour cream.

Ingredients

4 Large flour tortillas
2 cups Grated cheese - either mild or sharp cheddar, or Monterey Jack
Olive oil or light butter

Procedure:

  1. Heat a cast iron pan and spread olive oil or butter to grease the bottom.
  2. Place one tortilla at a time and turn it after 20 seconds.
  3. When both sides have been heated through, sprinkle half a cup of cheese over the tortilla.  Be careful not to put cheese on the pan.
  4. Fold the tortilla in half and then turn it once.
  5. Put in a plate and divide the tortilla in three to make three triangles.  Serve with nachos and dips.
