Burrito

Burrito is a complete meal by itself. A favorite of hubby and we are always on the lookout for the best burrito joint.

Burritos can either use beef, chicken or veggies for filling.  There's also breakfast burrito.

I use chicken most of the time since it's difficult to find good beef in Calapan.



Ingredients for the chicken filling

1/2 kilo chicken thigh fillet
1/4 tsp each of salt, pepper, cumin, chili powder
A clove of garlic, minced


Marinate chicken in spices and garlic for about an hour.
Grill, broil or bake chicken for 20-25 minutes.



Once cooked, chop into strips. As always, I cooked the chicken in Actifry to minimize the fat.

To assemble the Burrito you'll be needing:

6-8  pcs small flour tortillas
4 cups mexican rice
1 cup chopped white onions
1 cup chopped tomatoes, seeds removed
2 cups enchilada sauce
2 cups shredded lettuce (iceberg or romaine)
2 cups baked beans
1 cup grated cheddar or light cheese
1 cup sour cream

Spread enchilada sauce over tortilla, lay shredded lettuce over. Put some mexican rice, baked beans, chicken strips, onions, tomatoes, grated cheese and sour cream.
Roll the tortilla and serve.
