Minatamis na Saba


Saging na Saba is how Filipinos call the Plantain Banana.  This type of banana is usually cooked instead of being eaten raw.  In Mindoro, the most popular way to cook saba is called "Sinulbot"  or what we are all familiar as Banana Que.

Minatamis na Saba is one easy way to prepare a merienda or dessert.


Ingredients


10 pcs banana (saba variety)
1 cup brown sugar
1cup water
1-2 stalks pandan leaf (optional)
kalamansi rind

Peel bananas and slice diagonally about 3/4 inch thick. A whole piece can yield around 4-5 slices.
Put the bananas into a saucepan and pour water enough to cover. Add the sugar and pandan stalks. Stir to mix the sugar.

Bring to a boil then adjust the heat to low. Once it's boiling, grate kalamansi rind over the pot then cover. Let it simmer for 5-7 minutes while stirring occasionally.  Check once in a while if you need to add more water. The syrup must be a little thick in consistency. Turn off the heat, your bananas must be al dente and have a chewy texture when you eat it. Take out the pandan leaves before transferring to a serving plate.

You can serve it as is or you can add crushed ice and milk for a more refreshing meryenda or dessert.

    Sinulbot is NOT Banana Que. Bananaque are sugar-coated deep-fried bananas. Sinulbot is a process where you pan-fry bananas with sugar and a little water. It has a sauce-like consistency.
