Enchilada Sauce

Prepared enchilada sauce will last for 7-10 days in the fridge as long as you keep them properly in a sterilized bottle.  It's so easy to make and you can use it for your tacos, burritos, fajitas or simply use it as a salad dressing.








Ingredients
1 tsp. Vegetable oil
1 big white onion, minced
3 cloves garlic, minced
2 big fresh tomato, seeded and pureed
2 tbsps. cilantro, chopped
1 red bell pepper, finely chopped
2 pcs. Chili pepper (you can substitute siling labuyo)
2 cups water
Salt and pepper to taste

Heat oil in pan, saute onion till it becomes transparent, add garlic and let cook for about two minutes.

Pour the pureed tomato, chili and bell peppers. Saute for a minute and add the water. Let it simmer for 10-12 minutes until it becomes a little thick in consistency. Add salt and pepper to taste.  Drop the cilantro and let it sit for about a minute before turning off the heat.

Let it cool completely before storing.
